If you have not heard, Martha Stewart has published a new cookbook. Martha Stewart’s New Pies and Tarts is her latest cookbook and it is full of pies and tarts. She has devoted ten chapters in all to both sweet and savory pies and tarts.

On Easter Sunday, I needed to make two desserts for dinner. I had already made a complicated dessert that took many hours. So, I was looking for something that was less time consuming. From Martha’s new cookbook I tried the Crisp Coconut and Chocolate Pie. This pie only requires four ingredients-butter, sweetened coconut, bittersweet chocolate and cream.

The crust is the sweetened coconut and butter that is made into a crust and then baked in the oven until it is toasted. The filling is the heated cream with the bittersweet chocolate that makes a ganache. The filling is then poured into the cooled crust. The pie is refrigerated until the filling is set. With very little time and effort, this was one tasty pie.

After making and eating this delicious pie, I can’t wait to try some of the other recipes in this book. The Strawberry Icebox Pie looks really good. And later on this summer I want to try the Summer Squash Lattice Pie. The summer squash that I have gotten at  Monday Market here at the library would be delicious in this recipe. Just in case you need or want to know, Monday Market starts again May 16th.

As always with a Martha Stewart cookbook, the photography is beautiful. At the back of the book, there is a section on ingredients, equipment and techniques that would be good for any baker at any level.
