I had some extra boneless skinless chicken breasts and I needed a new recipe to try. I don’t like to make the same thing over and over again. I was in the Periodicals room looking at magazines when I spotted the April Everyday with Rachel Ray magazine. In her 30 minute part of the magazine, there was a recipe for Chicken with Polenta and Balsalmic Vinegar sauce. It also had green beans and asparagus with it. So, I gave it a try and it was just wonderful. It did take longer than 30 minutes to make it but it still was excellent. If you want something that is relatively easy and doesn’t take too much time this is the recipe for you. I really liked the asparagus and the green beans that you make with it. With a green salad, you have a complete meal. There are other recipes that you might like so come into the Periodicals room and take a look at the April Everyday with Rachel Ray magazine.
