If you did not know, we have a service here at the library called recipe assistants. If someone needs help with a recipe, the recipe assistants will help find what they need. Today, a patron needed a recipe for Cranberry Ice. She said it came from an older recipe book. We found it in a cookbook called Food for Thought in the Topeka Room. So, here is the recipe.
Cranberry Ice
1 1/2 cup sugar
1 # cranberries
3 cups water
Grated rind and juice of an orange
Combine sugar and water and cook for 5 minutes. Add cranberries. Cool for 5 minutes after they have reached the boiling point. Strain and cool. Add grated rind and juice of orange. Pour into tray and freeze. Stir with wooden fork in tray or remove frozen mix to mixing bowl and beat until light and creamy. Return to freezing tray and finish freezing without stirring.
This is sometimes served at Thanksgiving but I think it sounds good with these hot summer days. Remember if you have a question about a recipe, be sure and let your recipe assistants assist you. Happy cooking!
